Bakers offered new moisture resistant sugar product
moisture-resistant sugar to its dry ingredients range for bakers,
which it claims can prolong shelf life and improve product quality.
The MR Sugar has been formulated to provide bakers with a healthier product that contains non-hydrogenated vegetable oil, free from trans fats. Trans fats are frequently added to bakery items to extend shelf-life, stabilise flavours and maximise storage potential. However the fats, which are created by hydrogenating plant oils, have recently been the subject of public condemnation after scientific research proved they can raise LDL 'bad' cholesterol levels and influence other risk factors for cardiovascular diseases. In addition to its health credentials, the moisture-resistant sugar can extend product shelf-life as it does not dissolve at the same rate as standard decorative sugars. Suitable for use on cakes, pastries and desserts and with a particle size similar to caster sugar, the product can be dusted onto both warm and cold cakes to give a freshly-baked appearance over prolonged periods of time. British Sugar's commercial product manager Ian Hollyman said: "MR Sugar will not only outperform ordinary caster sugar, but it also has the clean taste of sugar with none of the aftertastes often associated with alternatives such as dusting powders. "MR Sugar retains its texture and visual impact on the surface, making cake and pastry products more attractive at point of sale and when served." The British Sugar product, released into the market last month, follows a similar development from ingredients giant Danisco who launched its Decoration Nib Sugar towards the end of last year.
